This long (200mm) thin filleting blade is loved by chefs who deal with a lot of fish in their kitchens, as it flexes to give you great control and retains its efficient cutting edge so well.

The flex was designed by a 2 Michelin starred chef so that you do not loose control when filleting. This slender blade is easily maneuverable and is paired with a slender handle for ease of use.
