Another knife developed by Yorkshire Chef Karim Maou – the I.O. Shen Niku Boning Knife is a stiletto boning knife with an inverted handle for a comfy holding position. The fine blade with its small surface area allows free movement and less resistance.This design feature really helps with boning meat, fish, and poultry. Boning knives have a narrow blade. The primary use of this knife is to remove bones from cuts of meat. The curve of the edge is designed to cut up to and around bones.
This is designed for trimming around bones, NOT cutting through them.
